RAISIN FILLED COOKIES | |
1/2 c. butter 1 c. light brown sugar 1 egg 1 tsp. vanilla 2 c. sifted flour 2 tsp. baking powder 1/2 tsp. salt Mix ingredients. Chill dough and roll. Cut in rounds. Drop filling on middle of round and cover with another round. Press down edges; prick top with fork. Bake on ungreased cookie sheet. Check closely while baking as ovens vary. RAISIN FILLING: 1 c. raisins 1 tbsp. flour 1/2 c. water Mix flour with raisins. Add water and cook until thick, stirring constantly. Put mixture in blender and chop or grind raisins before cooking. This recipe might make enough filling for 2 batches of dough. It may e stored in the refrigerator. |
