SWEET POTATO CASSEROLE 
3 c. sweet potatoes, mashed
1 stick butter
1 1/2 c. sugar
1 tsp. vanilla
1/2 c. milk
3 eggs

Melt butter and add rest of ingredients to cooked potatoes. Beat on low speed of mixer until creamy. Put into well-greased (I use Pam) casserole dish.

Topping:

1 stick butter, melted
1 c. brown sugar
1 c. chopped pecans
1/4 c. plain flour

Spread topping mixture on top of potatoes and bake at 350°F for 20 to 30 minutes.
