EGGPLANT BALLS | |
3 tbsp. olive oil 3 garlic cloves, minced 1 lg. eggplant, peeled and diced 1 tbsp. water Grated mozzarella, if desired 1 c. seasoned bread crumbs 1/2 c. fresh parsley, chopped 2 eggs, beaten 1/2 c. grated cheese Heat oil in large saucepan, gently saute garlic until brown. Add eggplant, the tablespoon of water and cover. In mixing bowl combine eggplant, bread crumbs, parsley, eggs and cheese. Mix well, let stand for 20 minutes. Form into balls and fry on all sides in olive oil. Place balls on greased pan and bake 30 minutes at 325 degrees. Cover with marinara sauce and sprinkle with grated cheese and mozzarella. Or drop in spaghetti sauce and serve. |
