SPINACH BALLS | |
2 (10 oz.) pkgs. frozen spinach 4 med. potatoes, boiled 1 sm. clove garlic, chopped fine 1/4 c. chopped parsley 1/8 tsp. salt 1/8 tsp. pepper 2 beaten eggs 6 oz. Mozzarella cheese, chopped fine 1 c. seasoned bread crumbs 1/4 c. oil Cook spinach and drain. Mash boiled potatoes and add to spinach. Add garlic, parsley, salt and pepper, 2 beaten eggs, Mozzarella cheese; mix thoroughly and chill (about 1 hour). Roll mixture into balls, then roll in seasoned bread crumbs. Deep fry spinach balls until golden brown. Serves 6-8. |
