CLAM CHOWDER 
1 (8 oz.) can minced clams
2 slices bacon, diced
1 to 2 tbsp. minced onion
1 c. diced potatoes
1/4 c. grated carrots
2 c. milk
1 tbsp. flour
Sm. amount of celery and/or green pepper (if desired)

Brown bacon lightly; add onion and saute. Remove 1/3 of bacon drippings; add clam juice, potatoes, and carrots. Cook slowly until potatoes are just done. Add milk and flour. Salt to taste. Stir in clams. Reserved bacon fat may be added if necessary for flavor. Keeps well and improves with age. Serves 2 to 3.
