ACINI DI PEPE SALAD 
2 c. acini di pepe, cooked in salt water

#1:

1 3/4 c. pineapple juice
2 tbsp. cornstarch
2 eggs
1/2 tsp. salt
3/4 c. sugar

#2:

1 lg. can crushed pineapple
1 lg. can pineapple chunks
2 cans mandarin oranges, drained
1 sm. pkg. mini marshmallows
1 lg. tub Cool Whip

Boil group (1) ingredients in microwave until thickened. Stir often. Pour over hot acini di pepe. Refrigerate overnight or until cool. Mix group (B) ingredients and cooled acini de pepe mixture. Note - other canned fruit can be added such as peaches or pears. Delicious! Serves 10.

Since microwave ovens vary in power, you may need to adjust your cooking time.
