POTATO-CORN CAKES 
Mash potatoes
Corn, whole or creamed
1-2 eggs
Seasoned bread crumbs
Oil
Sharp or mild cheese (optional)

Use leftover mashed potatoes and leftover corn. Mix together with either 1 or 2 eggs. Add seasoned bread crumbs. Mix well and make soft patties. Drop by large spoonful in frying pan with hot oil. Fry until golden brown. Turn and brown other side. Drain on paper towel. Chop or grate cheese; add to mixture before frying, if you want cheese.
