BUTTERMILK PANCAKES 
2 eggs, beaten
2 1/2 c. buttermilk
2 1/2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 tbsp. sugar (or less)
1/4 c. butter, melted

Combine well-beaten eggs and buttermilk in large bowl. Sift together flour, baking soda, baking powder, salt, and sugar. Stir into egg mixture. Blend until smooth. Add melted butter.

Drop by ladle or tablespoon on hot, lightly greased griddle. Brown on both sides until done. Makes 20-24 medium-sized pancakes.

These are very light and delicious. Freeze well.
