THIN BUTTERMILK PANCAKES 
2 eggs
1 heaping c. flour
2 c. buttermilk
2 tsp. sugar
1 tsp. baking soda
1/4 tsp. salt

Beat eggs thoroughly. Add remaining ingredients. Stir until well mixed. Bake on griddle at 400 degrees.

Excellent! Just what I was looking for. Has wonderful flavor and not too thin (not crepe like but not like regular pancakes). I made them into very large cakes that filled the bottom of a large skillet. They turned very easy without breaking. Texture and color were great which makes for good presentation. Delicious! Thanks for sharing your father's recipe! It makes it even more special. This one I'm keeping.
