APPLE PUFFED PANCAKE 
6 eggs
1 1/2 c. milk
1 c. all-purpose flour
3 tbsp. granulated sugar
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/4 lb. butter
2 lg. fresh apples, peeled & thinly sliced (prefer Delicious or Granny Smith)
2 to 3 tbsp. light brown sugar
1/2 tsp. salt

Preheat oven to 425 degrees. In a blender or large bowl, mix eggs, milk, flour, granulated sugar, vanilla, salt and cinnamon until blended. If using mixer, batter will remain slightly lumpy. Melt butter in a 12 inch fluted porcelain quiche dish or a 13 x 9 inch baking dish in oven. Add apple slices to baking dish. Return to oven until butter sizzles, (DO NOT LET BROWN). Remove dish from oven and immediately pour batter over apples. Then sprinkle with brown sugar. Bake in middle of oven for 20 minutes or until pancake is puffed and brown. Serve immediately for best taste. Leftover pancake can be reheated in oven. Delicious with whipped cream. Serves 6 to 8.

I made this for the family cause and followed most of the recipe however I used 4 eggs, 1/2 cup cake flour, about 1/2 cup yellow cake mix, left on the peels and sprinkled brown sugar on before and after I put it in the oven and then added melted Duncan Hines cream cheese and it came out wonderfully. I really think anyone will like it unless you don't like apples.

Loved this. But I think you can do with less butter. About 5 tablespoons should be enough.

Made this dish this morning. Pancake is a misnomer. It is more like a bread pudding. It's not bad but I think adding raisins would give it more flavor.

Excellent Recipe with modifications. More apples, brown sugar and cinnamon makes this recipe perfect. Less milk too.
