PEANUT BRITTLE | |
2 cups granulated sugar 1 cup chopped peanuts (or cashews) 1/4 teaspoon each baking soda and salt 1/2 teaspoon vanilla In a heavy or cast iron pan, melt sugar to brittle stage (295-300°F), stirring constantly. Remove from heat; stir in baking soda, add peanuts and vanilla. Pour onto flat greased marble or a baking sheet. Roll out until thin quickly with a buttered rolling pin. Let cool completely. When brittle hardens (next day), break into pieces with a hammer and package in air tight container. Submitted by: Belle |
