CRANBERRY FRUIT CAKE | |
1 c. butter 1/2 c. shortening 3 c. brown sugar 5 eggs 2 tsp. baking powder 1/8 tsp. salt 3 1/3 c. flour 1 c. milk 2 tsp. vanilla 1 c. light raisins 1 c. chopped pecans 8 oz. whole, raw cranberries 1 c. orange juice, warmed 1 c. sugar Cream the butter, shortening and sugar. Add the eggs, one at a time, mixing well after each. Stir together the baking powder, salt and flour; and add to the creamed mixture. Add the milk and vanilla. Mix in the raisins, nuts and berries. Grease and flour a 10" tube pan. Line the bottom with brown or wax paper. Bake at 325 degrees for 2 to 2 1/2 hours or until done. Remove from pan while still warm and glaze with a mixture of the orange juice and 1 cup sugar. May also be baked in smaller loaf pans. |
