MICROWAVE CARROT CAKE 
1/2 c. sugar
1 c. cooking oil
1 tsp. vanilla
3 eggs
1 1/2 unsifted flour
3/4 tsp. salt
1 1/4 tsp. baking soda
2 1/2 tsp. cinnamon
2 1/2 raw grated carrot
1/2 c. chopped walnuts

In large mixing bowl combine sugar, oil and vanilla. Add eggs and beat well. In small bowl stir together flour, salt, soda and cinnamon. Add to sugar egg mixture and mix in. Fold in carrots and walnuts. Pour batter into greased 12x8x2 dish. Microwave at high 13 to 15 minutes, rotating dish 1/2 turn every 4 minutes. Cool. Frost with cream cheese frosting.

CREAM CHEESE FROSTING:

8 oz. cream cheese
1 lb. confectioners sugar
6 tbsp. butter
2 tsp. vanilla

Mix together.

Since microwave ovens vary in power, you may need to adjust your cooking time.
