CINCINNATI CHILI 
1 1/2 lb. ground beef
2 med. onions, chopped
2 cloves garlic, chopped
8 oz. tomato sauce
6 oz. tomato paste
1 qt. water
3 tbsp. chili powder
1 tbsp. vinegar
1 tbsp. sugar
1/2 tsp. black pepper
1 bay leaf
1 tsp. ground cumin
Salt to taste
2 can kidney beans
1/2 tsp. dried marjoram
1/2 tsp. ground cardamon
Dash ground cinnamon
Cayenne pepper

Can substitute large can tomatoes in place of tomato sauce, tomato paste and water.

Brown beef, onions, garlic (don't burn or brown garlic!) in heavy pot. Spoon off excess fat. Add sauce, paste, water (or tomatoes) and the rest of the ingredients. Bring to boil. Cover and simmer. Stir occasionally until thick (1-2 hours). Add shredded cheese and chopped onion on top if desired.
