JAPANESE CAKE 
Cake:

1 1/2 c. sugar
3/4 c. butter or oil
1 c. buttermilk or sweet milk
4 eggs
1 lb. raisins
1 c. nuts
1 tsp. vanilla
1 tsp. baking soda if using all-purpose flour

Frosting:

3 c. sugar
1 whole fresh coconut (grated)
3 fresh oranges (grated)
1 fresh orange rind (grated)
1 ball of butter the size of an egg

In large mixing bowl, mix all cake ingredients together. Mix well and place in 3 round layer cake pans that have been sprayed with pam or greased and lightly floured.

Bake cake in 375°F oven till lightly brown about 1 hour.

While cake is cooling, mix in mixing bowl all icing ingredients and cook on stove top, till mixture begans to thicken. Do not let mixture get too thick or it will not spread over cake evenly.

Serve and enjoy.
