JAPANESE FRUIT CAKE | |
2 yellow cake layers 1 spice cake layer 1 (16 oz.) can crushed pineapple 1 (16 oz.) can apple sauce 1 (12 oz.) bag coconut 1/4 c. orange juice 1/4 c. lemon juice 2 tbsp. cornstarch 1 1/2 c. sugar 1/2 c. raisins Pecan halves Maraschino cherries 1 c. water Spice layer may be made from yellow cake batter by adding 1 teaspoon each of cinnamon, nutmeg and allspice. Before baking spice layer add raisins that have been dredged in flour. When layers are cool frost with filling. In heavy saucepan or Dutch oven combine all ingredients except pecan halves and cherries. Bring to a boil and reduce heat and continue cooking until desired thickness to frost cake. Remove from heat and cool slightly before frosting cake. Garnish cake with pecan halves and cherries. |
