“BUFFALO CHICKEN DIP” IS IN:

BUFFALO CHICKEN DIP 
2 (12 oz. ea.) cans premium chunk chicken, drained (Swanson)
2 (8 oz. ea.) pkgs. cream cheese, softened
1 cup Ranch dressing (Kraft or HIDDEN VALLEY®)
3/4 cup FRANK'S® Red-Hot hot sauce
1 1/2 cups shredded cheddar cheese

Heat chicken and red hot until heated through. Stir in cream cheese and Ranch dressing. Cook, stirring until well blended and warm.

Mix in half the cheddar cheese and transfer mixture to a slow cooker. Sprinkle of the remaining cheese over top, cover, and cook on LOW setting until hot and bubbly.

Serve with Ritz crackers.

Want a reasonable substitute that is low in fat? Instead of cream cheese, put a 32 ounce container of FF cottage cheese in the food processor, add the hot sauce and blend until the lumps are gone. Transfer to a dish and add flaked chicken.The texture is not quite as good but the flavor is great! You end up with a recipe that has only the fat from the chicken.

I've been making this for quite some time and it always gets rave reviews. I like to use half a cup of ranch and half a cup of bleu cheese rather than just using one of them (much better!). I also add a little more than 20 ounces of chicken and add more hot sauce than listed (I like it loaded with Louisiana Hot sauce). I bake it at 350°F for about 20 mins. and then put a thin layer of cheese over top it and bake an additional 10 mins. Everyone will love it!!

I make it w/ only one package of cream cheese, still comes out great... but I do mine in a saucepan over the stove, it's alot quicker (then keep it warm in a small Crock-Pot).

I agree with Katy... just used one pkg. cream cheese and diced up roasted chicken... it was amazing. I only used about 1/2 cup cheddar cheese in mine though and instead of the slow cooker I cooked it at 350°F for 20 mins.
