FLOUNDER MEUNIERE 
12 oz. flounder fillets
2 tsp. flour
2 tsp. butter
1/2 c. chicken broth
2 tsp. lemon juice
2 tsp. white wine
1 tsp. chopped fresh parsley
Dash of salt and pepper

Dust flounder lightly with flour and set aside. Heat butter in non-stick skillet, add flounder and brown lightly on both sides. Add broth, lemon juice, and wine. Simmer about 3 minutes. Sprinkle with parsley, salt, and pepper. A good waist-watcher's dish!
