SCALLOPED SPINACH 
2 (10 oz.) pkg. frozen spinach
3/4 c. milk
3/4 c. shredded American cheese
3 beaten eggs
1/2 tsp. salt
Dash of pepper
3 tbsp. chopped onion
1 c. soft bread crumbs
1 tbsp. butter, melted

Cook spinach and drain well. Mix with milk, 1/2 cup of cheese, egg, onion, 1/2 teaspoon salt and dash of pepper. Turn in greased 8 x 8 x 2 inch baking pan. Bake at 350 degrees for 25 minutes.

Combine crumbs, remaining cheese and butter; sprinkle atop spinach. Bake until knife inserted in center comes out clean (10-15 minutes longer). Let stand for 5 minutes before serving. Yield: 6 servings.
