SCALLOPED SPINACH WITH POTATOES 
1 lb. fresh spinach, washed & chopped
Or 10 oz. frozen spinach, drained & squeezed dry
4-6 med. potatoes washed & thinly sliced
1/4 c. butter, melted

Reserve 1 1/2 cups potatoes and combine the remainder with the spinach.

Butter a 2 quart casserole with part of the butter and add remaining butter to potato-spinach mixture.

Separately combine: 1/4 c. milk 1 tsp. salt 1/4 tsp. nutmeg 1/4 tsp. cayenne 2 tbsp. minced onion 1/4 c. grated Cheddar

Add this to potato - spinach mixture and pour it all into the buttered baking dish. Cover evenly with reserved potatoes and cover the casserole. Bake at 350 degrees for 50-60 minutes or until potatoes are tender. Top with 1/4 cup grated cheese. Bake an additional 10 minutes and serve.
