CRANBERRY BREAD 
1 1/2 c. cranberries
3 tbsp. butter
2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 egg
1 c. sugar
1/4 c. fresh orange juice
2 tbsp. hot water
1/2 c. chopped pecans (optional)

Preheat oven to 325 degrees. Grease loaf pan. Wash cranberries. Remove stems. Cut each cranberry in half. Set aside. Melt butter, set aside. Sift flour, baking soda, baking powder,, set aside.

In another bowl, beat egg, add sugar, melted butter, beat well. Beat in orange juice and water, with mixer. Add flour mixture. Beat just until ingredients are blended. Stir in cranberries and pecans. Pour into pan.

Bake for 1 hour and 5 minutes. Watch last 10 minutes. Cool 15 minutes in pan. Loosen. Remove from pan and cool completely.
