IMPOSSIBLE CHEESEBURGER PIE 
1 lb. ground beef or turkey
1/2 c. chopped onion
1/2 tsp. salt
1/2 tsp. pepper
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
2 tomatoes, diced
1 c. shredded Cheddar cheese
Optional: Green peppers & mushrooms

Heat oven to 400 degrees. Grease 10 x 1 1/2 inch square pan. Brown beef or turkey and onion together and drain off fat. Stir in salt and pepper; spread in pan. Beat in a bowl milk, Bisquick and eggs until smooth.

Pour into pan over meat mixture. Bake for 25 minutes at 400 degrees, then top with tomatoes and cheese. Return to oven and bake about 10-15 minutes longer or until knife inserted in center comes out clean. Cool 5 minutes before serving. Serves 6-8.

I found this to be like a quiche.. next time I would use more Bisquick or less eggs, or maybe only use the whites. I spiced the meat/onions after cooking with Worcestershire sauce, salt, and cracked pepper and topped with some leftover salsa instead of tomatoes. The edges came out great - nice and crispy.

I added taco seasoning, salsa & black olives to the meat and taco seasoning and a little cheese to the bisquick mixture!
