PINEAPPLE - CHEESE CASSEROLE 
1 (20 oz.) can pineapple chunks, drained (reserve 5 tbsp. juice)
1/2 c. sugar (or less)
3 tbsp. flour
1 c. grated Cheddar (med. or sharp)
1/4 c. melted butter
14 Rita crackers, coarsely crushed

Mix flour and sugar; add juice and mix well. Add pineapple and cheese, mixing thoroughly. Put into baking dish. Combine butter and cracker crumbs and spread over mixture. Bake at 350 degrees for 20-30 minutes. If recipe is doubled, increase baking time by about half. Excellent when served with ham. Almost good enough for dessert!
