ZUCCHINI SAUTE 
2 thick 12 inch zucchini
1/2 jar quick pizza or spaghetti sauce (8 oz.)
1/4 - 1/2 can tomato juice
Velveeta cheese (for topping)
2 c. sliced mushrooms
1/2 onion (diced)
2 tbsp. butter
Sour cream

Slice zucchini 1/4 inch thick. Saute onions in butter then add zucchini and mushrooms. Saute until zucchini is a little soft. Add sauce and cook on low-medium heat until warm.

Stir in 2-3 heaping tablespoons sour cream. Put into serving dish and add Velveeta slices on top. Cover to let cheese melt. Serve quick and hot!! Serves 2-4.
