MEXICAN FRUIT CAKE 
2 c. flour
2 c. sugar
2 eggs
2 tsp. baking soda
20 oz. crushed pineapple
Juice from pineapple
1 c. chopped nuts

Add all cake ingredients together including pineapple juice. Pour batter into well greased 12 x 18 inch pan. Bake at 350 degrees for 35 minutes.

ICING:

1 c. 4X sugar
1 stick butter
2-3 oz. cream cheese
1 tsp. vanilla

Cream sugar and cheese together. Add butter then vanilla. Beat until smooth.
