CINNAMON-NUT DIAMONDS | |
2 c. all-purpose flour 1/2 tsp. salt 1 tsp. cinnamon 1 c. soft butter 1 c. light brown sugar, packed 1 tsp. vanilla extract 1 egg yolk 1/2 c. ground walnuts 1 egg white 1/2 c. ground walnuts Sift dry ingredients together and set aside. Beat until creamy and add brown sugar, vanilla extract and egg yolk. Mix well. Add flour mixture and 1/2 cup ground walnuts. Spread in greased 10x15x1 inch jelly roll pan. Lightly beat egg white with 1/2 teaspoon water. Brush egg white on dough. Sprinkle remaining ground nuts on dough and press lightly into dough with hands. Bake 25 to 30 minutes at 350 degrees. Cut into 2 inch diamonds while still warm. Allow to cool completely before removing from pan. About 2 1/2 dozen. |
