BAKED STUFFED TOMATOES 
6 tomatoes
1/4 c. cooked bacon, chopped
1/4 c. celery, diced
1 sm. onion, diced
3/4 to 1 c. bread crumbs
1/2 tsp. salt
2 tbsp. butter
1/2 c. cheddar or Monterey Jack cheese, grated

Preheat oven to 350 degrees. Cut off top of tomatoes and scoop out the center. Mix pulp and next 6 ingredients and 1/4 cup cheese. Fill tomatoes and sprinkle remaining cheese on top. Bake in greased baking dish for 30 minutes. Could omit bacon and add 1/4 cup chopped bell pepper.
