2 cups white rice 3 cloves garlic, minced 2 whole white onions, small dice 3 celery sticks, 1/4 inch dice 5 mushrooms, sliced thin red bell pepper, cut into long strips yellow bell pepper, cut into long strips 1 tablespoon soy sauce olive oil one bowl ice water salt, to taste pepper, to taste Wash, and do prep work (slice and mince as directed above) all ingredients. Boil some salted water, add the vegetables, and cook for about 30 seconds. After 30 seconds, remove from the boiling water, and as quickly as you can, place them in a bowl of ice water, then drain and pat dry with a paper towel. Begin cooking the rice. Wait until rice is about half-way done cooking before you start to sauté the vegetables. Heat some olive oil in a pan and wait for the oil to come to a simmer (the oil will start to bubble up once it comes to a simmer). Drop the vegetables all at once into the hot oil taking care not to burn yourself - the hot oil may spatter). Stir vegetables for about 30 seconds and then sprinkle with soy sauce, to taste.
