GRAHAM CRACKER CUP CAKES 
2 1/2 c. graham cracker crumbs or 2 pkgs. of 4 pkg. box
2 eggs
1 c. sugar
1 tsp. vanilla
2 tsp. single acting baking powder or 1 tsp. double acting
1 c. milk
1/2 - 1 c. chopped nuts
1/2 c. shortening

Cream shortening and sugar. Add milk, egg yolks, baking powder and vanilla, cracker crumbs and nuts. Mix thoroughly. Fold in beaten egg whites. Fill baking cups with 2 level tablespoons and bake at 350 degrees for 20 minutes. Let cool. When done top with 1 small can crushed pineapple and 1 cup sugar. Put in pan and bring to boil. Put one tablespoon topping on each cup cake. (Bake ahead and let set one day.) (This is optional but they are good whether they set a day or not.)
