CREAM OF MUSHROOM SOUP 
1 c. mushrooms
2 tbsp. chopped onions
2 tbsp. butter
2 tbsp. flour
2 c. chicken broth, brown stock or beef broth
1/2 c. light cream
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg

Slice mushrooms. Cook with onions in butter for 5 minutes. Blend in flour. Add broth. Cook and stir until slightly thickened. Cool slightly. Add cream and seasonings. Heat through. Serve at once. Serves 4 to 6.
