CREAM OF AVOCADO SOUP 
2 lg. avocados
1/2 tsp. salt
1 c. half and half
2 tsp. lemon juice
2 c. chicken broth
1/4 c. dry sherry
Lime or sour cream

Cut the avocados in half. Remove the seeds and scoop out the flesh. Place the avocado flesh, salt, half and half, and lemon juice in a blender or food processor. Blend to a smooth puree. Pour puree into a pan or bowl. Heat chicken broth to boiling. Slowly add broth to boiling. Slowly add hot broth to puree. Add sherry. May be served hot or cold.

If serving hot, heat but do not let it boil. If serving cold, refrigerate for several hours and serve in cold bowls. Garnish with a thin slice of lime or a dollop of sour cream.
