SQUASH DELIGHT CASSEROLE 
1 lb. squash
1 1/2 tsp. sugar
1/2 c. mayonnaise
1/2 c. chopped pimento
Salt and pepper to taste
1/2 stick butter
1/2 c. onions, chopped
1/4 c. green peppers, chopped
1/2 c. pecans, chopped
1 egg
1 c. grated cheese
Cracker crumbs

Cook squash until tender; drain, then add butter and mash. Mix sugar, egg, mayonnaise, nuts, cheese, bell pepper, onion, and pimento. Add to squash mixture. Pour mixture into casserole dish and top with cracker crumbs followed by grated cheese. This is cheese in addition to the 1 cup in the casserole. Bake at 350 degrees for 35 minutes or until brown. Makes 8 servings.
