SQUASH DELIGHT CASSEROLE 
1 lb. yellow squash
1 tsp. sugar
1/2 c. mayonnaise
1/4 c. chopped green peppers
1 tsp. salt
1 c. Ritz cracker crumbs
1/2 c. sharp cheese, grated
1/2 c. butter
1 egg
1/2 c. chopped pecans
1/2 c. chopped onion
1/2 c. chopped pimiento
2 tbsp. butter

Cook squash until tender; drain. Add 1/2 cup butter, mash. Mix sugar, egg, mayonnaise, nuts, pepper, onion, salt and pimiento. Pour in greased casserole dish. Put cracker crumbs over top. Sprinkle cheese and dot with 2 tablespoons butter. Bake at 325 degrees for 30 minutes or until top is golden brown.
