BAKED ZITI | |
2 tbsp. minced oregano 1 tbsp. chopped parsley 1 1/2 tsp. salt 1/2 tsp. sugar 1 clove garlic, crushed 1/2 c. Parmesan cheese 1/2 c. dry red wine 2 lb. can Italian plum tomatoes, do not drain 1 lb. can tomato paste 1/4 tsp. pepper 1 c. water 3 lbs. Italian sausage 1 lb. ziti 8 oz. Mozzarella cheese Combine first 11 ingredients in large saucepan. Cover and simmer 1 1/2 hours, stirring occasionally. Lightly brown sausage in 2 teaspoons butter cover and cook 30 minutes over medium heat, remove to paper toweling with a slotted spoon, allow to drain and slice 1 inch thick. Cook ziti as directed on box. (do not cook as long, if you prefer firmer ziti). Spoon a thin layer of sauce into an ungreased 13 x 9 x 2 inch baking pan and arrange a layer of ziti; sauce; one third sausage; top with mozzarella cheese, cover with reynolds wrap, cook in 350 degree oven for about 30 to 35 minutes. Serve extra sauce with baked ziti. Serves six. |
