MOCK VEAL PARMESAN 
5 lg. Shredded Wheat, crumbled or rolled
1 sm. onion, finely chopped
Italian sauce (Ragu is fine)
1/2 c. chopped walnuts
3-4 eggs
Garlic salt
Parsley, about 1/8 c. fresh or dry
Parmesan cheese
Mozzarella cheese

Combine Shredded Wheat, onion, nuts, eggs, parsley, and garlic salt. Form into patties and brown in olive oil. Pour a little Italian sauce on bottom of oblong dish. Place patties in sauce and cover with slice of Mozzarella cheese. Cover with Italian sauce. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 minutes. Serves 8.
