FRENCH COCONUT PIE | |
1 1/2 c. Sugar 2 tbsp. All Purpose Flour 1/4 tsp. Salt 1/4 c. plus 2 tbsp. Butter melted 3 Eggs Beaten 1 tsp. White Vinegar 1 tsp. Vanilla extract 1 tsp. Coconut extract 1/4 tsp. Almond extract 1 3 1/2 oz. can of Coconut 1 unbaked 9-inch Pastry Shell Combine Sugar, Flour and salt in a medium bowl. Add butter, mix well. Add Eggs to bowl and beat until blended. Add Vinegar, Flavorings and Coconut to bowl and mix well. Pour filling into Pie Shell. Bake at 350°F for 45 minutes, or until Pie is set. Shield Pie with foil after baking for 25 minutes. PS: Enjoy! You'll probably want to learn French after tasting this Pie. |
