ECONOMICAL SPONGE CAKE 
3 eggs
1 c. sugar
1/3 c. water
1 tsp. vanilla or lemon extract
1 1/2 c. sifted flour
1 tsp. baking powder
1/8 tsp. salt

Beat 3 eggs until light. Beat in sugar. Gradually add water and vanilla (lemon). Sift flour with baking powder and salt; fold into egg mixture. Blend well. Bake in ungreased pans at 350 degrees for 25-35 minutes.
