DIET APPLE SPONGE CAKE 
1 1/2 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
6 eggs, separated
1/2 c. apple juice
1 tbsp. lemon juice
Sweetener = to 1 c.
3/4 tsp. cream of tartar

Preheat oven to 350 degrees. Sift together flour, baking powder and salt. In large bowl beat egg yolks, apple juice, lemon juice and sweetener until fluffy. Gradually beat in dry ingredients.

Beat egg whites at high speed in separate bowl until they are frothy. Add cream of tartar and continue to beat until stiff peaks are formed. Fold egg whites into egg yolk mixture. Pour into 9 inch tube pan and bake 40 to 50 minutes until lightly browned. Invert to cool, but do not remove until cool.
