CHICKEN CROQUETTES 
4 tbsp. butter
1 c. chicken broth or milk
1/2 tsp. salt
1/8 tsp. pepper
4 tbsp. flour
1 tsp. chopped parsley
2 finely grated hard boiled eggs
2 c. finely chopped chicken
1 egg, slightly beaten
3 tbsp. milk
Bread crumbs

Melt butter in saucepan. Add flour and stir until smooth. Add milk or broth gradually until thick and smooth. Set aside until cool. Add salt, pepper, chicken, parsley and grated eggs. Mix and chill thoroughly. Shape into croquettes or patties. Add milk to egg. Dip croquettes in egg and milk mixture, then in bread crumbs. Fry in hot fat until golden brown. Serve plain or with gravy. Makes 6 servings.
