CHICKEN CROQUETTES 
4 tbsp. butter
6 tbsp. flour
1 c. milk
Salt and pepper
Parsley
Lemon juice
2 c. chicken, cut finely
Bread crumbs
1 egg, beaten

Melt butter and add flour. Stir until smooth, add milk. Cook until very thick. Season with salt, pepper, parsley, and lemon juice. Add cut up chicken. Spread on platter and refrigerate until cold. Shape into croquettes. Roll in bread crumbs, egg, then bread crumbs again. Deep fry in hot oil. Serves 4-6. Serve croquettes with a rich cream sauce like the following.

CREAM SAUCE:

3 tbsp. butter
3 tbsp. flour
1 c. chicken broth (saved when you cook chicken)
1 c. milk

Season to taste and add 2 beaten egg yolks.
