FRENCH COCONUT PIE 
3 eggs
1 1/2 c. sugar
1/2 c. butter, melted
1 tbsp. lemon juice
1 tsp. vanilla
1 can flaked coconut (3 1/2 oz. can)

Beat eggs, stir in vanilla, butter and lemon juice. Pour in 9 inch unbaked pie shell and bake 45 minutes at 350 degrees.
