PUMPKIN FRITTERS 
1 1/4 c. flour
3 tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. cloves
1/8 tsp. nutmeg
1 can pumpkin
2 eggs, separated
1 qt. corn oil
Powdered sugar

In large bowl mix first 7 ingredients. Stir in pumpkin and egg yolks. In small bowl mix on high egg whites until stiff. Fold into pumpkin mixture. Heat oil over medium heat. Add pumpkin mixture by teaspoons to oil. Fry 3 minutes or until golden. Drain and sprinkle with sugar. Makes about 5 dozen.
