RHUBARB CUSTARD PIE 
1 1/2 c. sugar
3 tbsp. flour
1/4 tsp. cinnamon
1 tbsp. butter
3 eggs, beaten
3 c. rhubarb (cut into 1/2" pieces)
1 (9") unbaked pie shell with built up edges

Blend sugar, cinnamon and flour together. Add beaten eggs. Beat until smooth. Pour over rhubarb and dot with butter in the unbaked pie shell. Bake in hot oven at 450 degrees for 10 minutes. Then reduce heat to 350 degrees for about 30 minutes or until done.
