COCOA--BANANA MUFFIN 
1 1/3 c. all-purpose flour
1 c. oats
1/2 c. brown sugar, packed
1/3 c. unsweetened cocoa
1 tbsp. baking powder
1/4 tsp. baking soda
2 sm. bananas, mashed
1/2 c. low-fat milk
5 1/2 tbsp. butter, melted (1/3 cup)
2 egg whites, beaten slightly
1 tsp. vanilla
Powdered sugar (optional)

Heat oven to 400 degrees. Line 30 miniature muffin cups with paper baking cups or spray with no-stick spray. Combine first 6 ingredients, mix well. Add combined bananas, milk butter, egg whites, vanilla; mix until moistened. Fill prepared cups until almost full. Bake 10 to 12 minutes or until inserted toothpick comes out clean. Cool. sprinkle with powdered sugar if desired.

Note: 12 medium muffin cups may be used. Baking time 20 to 25 minutes.
