POULET DE PROVINCE 
1 fryer
3/4 c. Dijon vinaigrette dressing
2 c. quartered mushrooms
1 can ripe olives, drained

Arrange chicken in baking dish. Pour vinaigrette over and marinate at least 4 hours or overnight. Bake 40 minutes in 375 degree oven, basting occasionally. Add mushrooms and olives and bake 20 minutes more or until tender. Serve on rice.
