POLENTA 
1 c. cornmeal
1 c. cold water
3 c. boiling water
Salt
Spaghetti sauce
Grating cheese
Fresh cheese (Brick, Mozzarella or Roma)

Bring to a boil 3 cups cold water mixed with salt. Add 1 cup cornmeal which has been mixed with 1 cup cold water. Stir all the time, at least 20 minutes. Serve with stewed chicken. Also serve with spaghetti sauce, grating cheese, and fresh cheese (Brick, Mozzarella or Roma). In dish put first layer, grating cheese; second layer, grated fresh cheese; third layer, spaghetti sauce; fourth layer, polenta; fifth layer, grating cheese; sixth layer, fresh cheese; seventh layer, spaghetti sauce.
