POLENTA WITH SAUSAGE 
1 lb. sweet or hot Italian sausage
1 sm. onion
1 tbsp. olive oil
1 can crushed tomatoes
Salt & pepper
1 c. yellow cornmeal
1 c. grated Parmesan cheese

Brown sausage and onion in oil over medium heat. Add tomatoes and seasonings. Simmer 1 hour, stirring occasionally. Bring 1 1/2 quarts of salted water to a boil. Add cornmeal slowly into water, stirring constantly, to prevent lumping.

Cook over low heat until cornmeal leaves sides of pan. Remove from heat. Add 1/2 cup cheese. Place half of the cornmeal on large platter. Pour 1/2 of sausage mixture over cornmeal. Sprinkle remaining cheese. Repeat layers and serve at once.
