PORK CHOPS IN ORANGE SAUCE 
4 pork chops, about 1 inch thick
3 tbsp. flour
Salt and pepper to taste
1 tbsp. shortening
2 lg. oranges, peeled and sectioned
2 tbsp. brown sugar
1 tbsp. cornstarch
1 1/4 c. chicken broth
Juice of 1 lemon
Juice of 1 orange
1/4 c. golden raisins

Dredge chops with flour, salt and pepper. Brown on both sides in shortening in skillet at 375 degrees. Place orange sections on chops. Mix sugar and cornstarch and sprinkle over meat. Add broth and stir until thickened. Add juices and raisins, cover and simmer at 225 degrees for 40 minutes or until tender.
