BLACKBERRY PUDDING | |
1/4 c. soft butter 1 c. sugar 1 c. flour 2 tsp. baking powder 1/4 tsp. salt 1/2 c. milk Cream butter and 1/2 cup sugar. Sift flour, baking powder and salt together. Add to sugar and butter mixture along with 1/2 cup of milk. Beat well. Place batter in greased casserole (about a 2 quart size). Place 1 cup of well drained berries on top of batter. Place 1/2 cup sugar over berries and finally pour 1 cup berry juice over all. DO NOT STIR. Bake at 375 degrees for 45 minutes, or until brown. Batter will come to top as it bakes. Serve warm with whipped topping, whipped cream or ice cream. Also good cold. |
