COTTAGE CHEESE FUDGE COOKIES 
2/3 cup butter, at room temperature
1 2/3 cups granulated sugar
1 cup small curd cottage cheese
2 large eggs
2 tsp. vanilla
1 1/4 cups all-purpose flour
3/4 cup cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup chopped almonds or walnuts
Powdered sugar

Preheat oven to 350°F.

Whirl butter, sugar, cottage cheese, eggs, and vanilla in a food processor until smoothly blended; or beat with an electric mixer. Stir together flour, cocoa, baking powder, baking soda, and nuts; add to cottage cheese mixture and stir to blend. Chill in refrigerator for 1 hour.

Form dough into 1-inch balls; roll each in powdered sugar to coat. Place 1 1/2 inches apart on buttered pan.

Bake at 350°F for about 12 minutes.

Makes 6 dozen.
